Come Christmas season and my tastebuds linger with the taste of plum cake, I have grown up eating this cake, digging into the cake and searching for those colorful fruits and nuts and looking up at my brother's piece to check he has more or less in his bite. Those were such beautiful memories.
Being on keto, I really was sad about missing that piece of joy. But this Plum cake will not let me miss any joy and those lively memories. I can have a bite and relive those old memory lanes again. Enjoy!!!
Cooking time: 40 mins
Serves: 10 pieces
Ingredients
Step 1
Butter
1/3 cup
Step 2
Chia seed
1 tbsp
Flaxseed
flour 1 tbsp
Water 6
tbsp
Step 3
Almond
flour 1 &1/3 cup
Baking
soda 1 tsp
Ginger
powder 2 tsp
Cinamon
powder 1 tsp
Nutmeg
powder 1/4 tsp
Clove
powder 1/2 tsp
Sugarfree
stevia 1/3 cup
Walnuts
1/4 cup
Almonds
1/4 cup
Cranberries
unsweetened 1/4 cup
Vanilla
essence 1 tsp
Method
Preheat
the oven to 180c
Step 1
In a
saucepan heat butter and ket it melts, stir it intermittently on a slow flame, it will turn brown.
Shut the
flame and let it cool
Step 2
In a
small bowl add in the chia seeds and flaxseed flour and mix it thoroughly with the water and let it sit for a few minutes.
Step 3
In a big
mixing bowl add in all the dry
ingredients one by one.
Give it a
magic mix.
Now add
in all the nuts and cranberries.
Mix it
again.
Mow drop
in the browned butter, vanilla essence, and the chia flaxseed flour mix.
Mix it up
and it will form a soft dough.
Now take
a loaf pan or any baking dish and give a
desired shape with the help of the aluminum foil.
Now put a
parchment paper or just grease and drop the mixture into it.
Bake at
180c for 30-40 mins.
Take it
out and let it cool completely.
Transfer
from the baking dish onto a flat surface or cutting board
Now when
completely cooled slice it with a good knife hearty pieces, that is thick
slices.
