#1 Instant Moong Dal Halwa

#1 Instant Moong Dal Halwa

Ingredients
Moong dal 1/2 Cup
Sugar 1/2 Cup
Milk Full cream 1/2 Cup
Water 1/2 Cup
Ghee 1/4 cup Cardamom powder 1/2 tsp
Almonds chopped 1 tbsp
Cashew nuts 1 tbsp
Method
Wash the Moong dal and remove the excess water by hanging on a sieve and then rubbing with a dry towel.
Put the milk and water to boil.
Heat a nonstick pan.
Put 1 tsp ghee and roast the dal until it becomes golden in color and crisp.
Let it cool.
Powder it in a mixer jar to a granulated form.
Now again heat the same pan, add all the ghee keeping a little for after use.
Fry the chopped nuts until golden. take it out and keep it aside.
Add the powdered dal and roast in the ghee for 3-4 minutes.
Now add the hot milk into it slowly.
Saute until all the milk is absorbed by the powder
Now add the hot water and again saute until all the water is absorbed and ghee comes out.
Now add the fried nuts.
Now add sugar granules and cardamom powder to the mix and saute until the sugar is absorbed and ghee comes out from the mix
Serve hot.

Recipe Note:
To make Halwa always remember the ratio as Powder 1: Ghee 1/2: Water 2: Sugar 1 part. This applies for most all types of Halwas.
You can add Mawa even to it.
You can omit to add Milk and completely add water or vice versa.

#2 Banana Fritters

Ingredients
Boiled steamed Banana 200g
Green chilli finely chopped 1 tsp
Ginger finely chopped 1 tsp
Mint leaves 40 g
Rock salt 1 tsp
Cumin powder 1 tsp
Red chilli powder 1/2 tsp
Nutmeg powder 1/8 tsp
Coriander powder 1/2 tsp
Cardamom powder 1/2 tsp
Lemon juice 1
Sama rice flour/barnyard millet 1/3 cup
Finale
Oil for frying/2tsp oil fir air fryer
Juliennes of carrot and radishes
Method
In a mixing bowl add the steamed/boiled peeled bananas
Mash it well or grate it.
Now add all the ingredients one by one and mix it thoroughly.
Roll out into small balls.
Finale
Heat the oil in a frying pan and when its medium hot, drop some of the banana balls into it and fry till golden. Repeat for the remaining balls too.
Alternately, grease lightly all the balls in oil and air fry till golden in color at 200 for 20 mins in the hairdryer, tossing and turning in between once after 10 minutes.
Serve hot on a bed of carrots and radish juliennes with dips of your choice.

Method
Step 1
Common for both the versions
- Wash the cucumber and cut its edges and peel off the skin.
- Slice it into 1 & 1/2-2 inches pieces as shown in the video.
- Now scoop the soft portion from the middle keeping the base intact with the help of a knife
Step 2
- Now in a mixing bowl mix all the remaining ingredients.
- In a serving plate put the cucumber shells over it and fill it up with the mixture.
Final
- Sprinkle some sev/bhujia over it and drop a drop of green chutney and peanut and serve.

Method
- Soak the saffron in 1 tbsp milk.
- In a mixer jar, add the chopped mangoes.
- Churn it and take it out in a bowl.
- Now to the same mixer jar adds some milk, milk powder and 1 tsp ghee.
- Churn it. Now take the white bread slices, remove the sides and churn it in a mixer to form bread crumbs.
- In a nonstick pan, add the remaining ghee and then drop the bread crumbs and toast it till become crispy.
- Now add the milk mixture from the mixer jar.
- Stir it and add the remaining milk.
- Stir it continuously and within minutes it will thicken add the saffron milk, stir it and then again add the cardamom powder stir it.
- Lastly add the mango pulp and stir for 2 mins on a slow flame.
- Shut the stove and let it cool
- Take it out in a serving bowl.
- Serve chilled with a dressing of almonds and pistachios or with some chopped mangoes.
