Boredom Destroying Breakfast Ideas

With stay at home the only option available and best for the current scenario, and If you are bored with the routine recipes and want breakfast table to resonate with laughter and smile. Then, cook some interesting easy recipes and bring back the chirpiness on the table.


#1 OATS UTTAPAM IN 2 FLAVOURS
Preparation time: 15 mins
Standing time: 5 mins
Cooking time: 5 mins/ Uttapam/pancakes
Serves: 6

Ingredients
Semolina 1/4 cup
Oats 40g
Baking powder 1/2 tsp
Salt 1/2 tsp
Spinach 100g chopped, blanched & pureed
Beetroot raw 40g chopped and blended
Onions finely chopped 40g
Oil for cooking 2 tbsp

Method
  • In a mixing bowl add semolina, oats, baking powder salt and mix well.
  • Now divide it into 2 portions.
  • In one portion add pureed spinach and mix it thoroughly with water to make a thick batter.
  • In the other mixture add blended beetroot and mix it with water to make a  thick batter.
  • Heat a nonstick griddle /tawa and grease with oil.
  • Now spread 2 tsp of the beetroot mixture and spread it out as thin as possible.
  • Similarly, do the for the spinach mixture.
  • Sprinkle onions over it and, press it with the spatula.
  • Sprinkle some oil over it
  • After 2-3 minutes, when it becomes pink from the downside flip it over and let it cook from both the sides
  • Serve hot.

#2 SAVOURY CORN & PEAS DOUGHNUTS
Preparation time: 10 minutes
Standing time: 10 minutes
Cooking time: 25 minutes
Serves: 6 Doughnuts

Ingredients
For the Dough
Maize flour 1 cup
Peas fresh 1 /2cup
Cumin seeds 1 tsp
Fennel seeds1 tsp
Red chilli powder 1 tsp
Salt 1 tsp
Turmeric powder 1/2 tsp
Baking soda 1/2 tsp
Asafoetida 1/2 tsp
Green chilli finely chopped 1 tsp
Ginger finely chopped 1 tsp
Coriander leaves finely chopped 20g
Buttermilk 1/2 cup

Tempering
Oil 1&1/2 tbsp
Curry leaves a few
Green chillies a few divided into 2

Finale 
Salt 1/2 tsp

Method
For the Dough
  • Crush the peas in a mixer jar or food processor
  • Take a mixing bowl, add all the ingredients except the buttermilk
  • Mix it thoroughly.
  • Now make a soft dough with the help of buttermilk.
  • Meanwhile, put the steamer on the gas stove
  • Keep it aside for 10 mins.
  • Grease your palm with little oil.
  • Now take a small portion of the dough and make a ball out of it.
  • Flatten a bit and make a hole in the middle. Clear the hole area from the backside to give a proper doughnut shape.
  • Similarly, make all the Doughnuts
  • Now grease the steamer tray with oil, make it a little extra greasy.
  • Place all the Doughnuts and steam it in the steamer for 20-25 minutes.
Tempering
  • Heat a small pan, add oil to it
  • Then add mustard seeds to it. When it starts cracking add the green chillies. Saute it a bit.
  • Then add the curry leaves.
  • Saute a bit.
Finale
  • Sprinkle this on your Doughnuts.
  • Now while serving you can take the fried chillies separately and sprinkle salt over it.
  • Serve it.
  • Enjoy!!!
#3 BUCKWHEAT PANCAKES
Preparation time: 10 mins
Cooking time: 5 mins/pancake
Serves: 6

Ingredients
Buckwheat flour/kuttu atta 1 cup
Milk powder 1/2 cup
Sugar powdered 1/2 cup
Milk 1 cup
Fennel seeds 1 tsp
Green cardamom powder 1 tsp
Black peppercorns  coarsely ground 1 tsp

Method

#4 AMARANTH SAVOURY CAKE
Preparation time: 10 minutes
Cooking time: 15 minutes
Or Baking time: 15 minutes
Serves: 8

Ingredients
Amaranth flour 1 cup
Baking soda/baking powder 1 tsp
Carrots/pumpkin grated 50g
Potato boiled & grated 1
Corriander leaves 30g
Green chili finely chopped 1 tsp
Ginger finely chopped 1 tsp
Rock salt 1 tsp
Red chili powder 1 tsp
Cumin powder 1 tsp
Lemon juice 3 tsp
Curd 1/2 cup
Oil 1/4 cup

Finale
Poppy seeds 1 tsp
Oil 1 tsp

Method
  • In a big bowl sieve the amaranth flour and baking soda/powder together 
  • Add the ingredients one by one.
  • Mix well.
Finale
  • Preheat the oven to 200°c
  • Grease a baking dish.
  • Add the batter into it.
  • Pat, it with a spoon lightly, flattening the top a bit.
  • Grease the top with oil.
  • Sprinkle poppy seeds on top.
  • Bake at 200c°c for 15 minutes.
  • Take it out and let it cool for few seconds.
  • Serve hot
  • Enjoy!!!
