The keto journey is becoming very interesting. Each day begins with a new chapter. Exploring new Ingredients is one aspect, which I am enjoying to the fullest. Yes, there's a risk that your full hard work goes into the drain. But if you succeed, then the gates open to a plethora of many New Dishes to be explored. So indeed, it's a fascinating journey.
Method
Heat a nonstick pan.
Add ghee to it. When the ghee is hot add the gum arabica crystals.
Saute till all the crystals fluffy up
It would form small white clouds.
Now add the cream.
Saute intermittently and in few mins, it will become a thick paste wherein all the fluffed up gum arabica will dissolve.
Now saute again, it would firm a thick mass.
Add stevia and cardamom powder and saute again for few mins.
Ghee will separate out.
It's done
Take out in a square tin which is lined with butter paper.
Spread it out evenly.
Takeout from the tin.
Sprinkle some finely chopped pistachios and dried rose petals
Slice it into pieces.

PS: This is a good travel snack. Can keep for 3-4 days outside in room temperature or in the fridge for 15 days even.
