Pumpkin, The one vegetable I found is a godsend on keto. It is so versatile in taste, that it takes any flavour and texture of whatever dish you are missing on keto, Yes! anything can be converted to keto with this vegetable fruit.
Preparation time: 10 mins
Freezing time: 2-3 hours
Serves: 9
Ingredients
Step 1
Pumpkin 250g
Ginger powder 1 tsp
Cinamon powder 2 tsp
Nutmeg powder 1/4 tsp
Salt 1/4 tsp
Stevia sugarfree 1/3 cup
Coconut oil 1/3 cup
Step 2
Almond flour 1/3 cup
Desiccated coconut 2 tbsp
Almonds sliver 1 tbsp
Method
Step 1
Steam the pumpkin slices until soft.
One can do it in a microwave for 3-4 mins or on a gas stove for 10 mins.
Now drop this in a mixer jar.
Add in all the ingredients one by one.
Puree it.
Step 2
Now take out the mix in a bowl.
Drop the almond flour and the desiccated coconut and give a magic mix.
The mix would be like a very thick batter.
Now drop the mix into muffin moulds.
Freeze for 2 hours, until solid.
Take it out from the mould and store in an airtight container in the fridge.
